Homemade Plum Preserves

Once I realized how easy Homemade Plum Preserves were, I make them for guests to serve with breads or biscuits. Guests love a homemade treat. It takes a little babysitting the stove, but it’s so worth it.
I use this recipe with my Copycat First Watch Farmhouse Hash. The restaurant serves “in-house preserves,” but I must say, my recipes blow them plum out of the water.

Adjust the sugar amounts to your tastes. Plums can be a bit tart, so add more sugar if you prefer. The skins basically dissolve in the mixture, so that’s an added benefit to making your own.
It’s nice that you don’t have to thicken the preserves. The natural pectin takes care of that for you, and moisture from the plums evaporates while boiling, resulting in a wonderful, textural and super-flavorful condiment.
You can certainly can/jar these preserves, following the strict guidelines of canning processes. The National Center for Home Food Preservation, University of Georgia has a wealth of information on the preserving process. This link is one of many informative articles on canning.
There are no preservatives in this recipe, so the Plum Preserves cannot be kept as long in the refrigerator as some store-bought brands. Safety first, please.

Homemade Plum Preserves
Equipment
- Tall-sided pot
Ingredients
- 2 pounds plums, washed, pitted, and chopped
- 1 1/2 - 2 cup granulated sugar, to taste
- 2 teaspoons lemon juice
Instructions
- In a tall-sided pot (because the mixture will boil up), combine the plums, sugar, and lemon juice.
- Heat over medium heat, stirring often, until the plums are very soft.
- Skim any foam off the top, as necessary. Continue to cook until the mixture thickens, and most of the liquid has evaporated. The cooking process could take 25 to 40 minutes (or more) depending on how many plums and amount of sugar you used.
- Scrape the preserves into a bowl to cool to just barely warm (or cooler if you have the time). You can place them in the refrigerator to speed up the process.
- Serve with breads, biscuits, etc.
