Homemade Beet Chips are a healthy option to traditional potato chips!

Making your own chips at home is fun, a little bit of a lengthy process (I won’t lie), and much healthier than the bag of chips you may be used to snacking on. Adding spices, besides your faithful salt and pepper, brings a yummy twist to the already flavorful beets.

Golden or red beets (or both!) are fine. The red beets will bleed onto the golden beets if they are in the same bowl. Use two separate bowls and divide the salt amounts between the bowls, if you want to keep the colors from combining.

Disposable gloves will protect your hands from the beets bleeding onto them. Very helpful. I have a box of 100 disposable gloves that I pick up from Harbor Freight or Lowe’s/Home Depot. They’re great for handling hot peppers, too.

Beets are filled with nutrients, while low in calories (healthline.com). I know they are not ideal for a low-carb diet, but if you can get them into your diet, they’re a good veggie choice!

As I mentioned before, this is a bit of a lengthy process. Scrubbing, peeling, slicing, “sweating” (the beets, not you!), and a bit of baking time.

Ingredients
  

  • 4 medium-size beets, scrubbed, tops and bottoms trimmed, and peeled
  • 3/4 teaspoon kosher salt
  • 3/4 tablespoons extra-virgin olive oil, or Abingdon Olive Oil Co. Butter Infused Olive Oil, divided, see Notes
  • 1/4 teaspoon freshly-cracked black pepper, or to taste

Warm Spice Mixture, optional:

  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground allspice

Instructions
 

  • Preheat the oven to 325 degrees F.
  • Slice the beets on a mandolin, about 1/16th of an inch, for best results. Or, you can slice them with a knife. Using disposable gloves will keep your hands from turning colors from the beets.
  • Place the beets in a medium bowl, sprinkle with half of the salt, toss the beets, and sprinkle with the remaining half. Let the beets sit for 15 to 20 minutes to pull extra moisture out of them.
  • While the beets are “sweating,” line a baking sheet with parchment paper.
  • Drain off excess moisture and pat the slices dry.
  • There are two methods you can use here. One is simply to lay the slices onto the parchment. The other method is to use a rack over the pan with the parchment. Either works fine. Use two baking sheets if needed.
  • Drizzle the beets with oil and sprinkle with pepper.
  • If you would like to use the Warm Spice Mixture, simply combine the three dry spices in a bowl and sprinkle over the beets, after drizzling with the oil.
  • Bake in the oven for 45 to 55 minutes, checking to make sure they’re not burning. Depending on the diameter and thickness of your beet slices, baking time may take more or less minutes. If you like the centers to still be somewhat chewy, you may remove them from the oven before the chips fully crisp up. They will get crispier as they cool, unless you have allowed for chewiness. (You can remove the smaller chips that have already crisped up and allow the others to continue cooking.)
  • Remove the beet chips from the oven and allow them to cool.
  • Serve alone or with your favorite dip.

Notes

I absolutely love Abingdon Olive Oil Company’s extra-virgin olive oils and infused oils. I used my Butter Infused Olive Oil, but many of their other infused oils would be delicious here. May I suggest their Thyme Infused Olive Oil for this recipe, also?
