Beet Greens

Don’t toss out those beet greens! If they are not wilted and spotted, but bright green with strength left in the stalks, chop them and eat them!
Beet greens are a superfood, like most other greens (kale, etc.). Half a cup has only 22 calories. They are a great source of Vitamins A and K, antioxidants, and more! See more information here.

I add a splash of red wine vinegar, malt vinegar, or plain white distilled vinegar to the cooked greens for a pop of flavor.
I use my salad spinner for a wash and dry. If you do not have one, you can rinse them well in a colander and pat dry.

Beet Greens
Fresh beet greens sauteed in extra-virgin olive oil, with garlic, salt and pepper. Easy, delicious, and healthy!
Ingredients
- 2 teaspoons extra-virgin olive oil
- beet greens and stalks from 2 bunches of beets, approx. 5 cups, see Notes for beet recipes
- 1 garlic clove, finely minced
- sea salt or kosher salt, to taste
- freshly-cracked black pepper, to taste
- splash red wine vinegar
Instructions
- Chop, wash, and dry the greens and stalks. I cut the stalks into 1 ¼” pieces. A salad spinner is perfect for washing and drying the greens!
- In a medium, shallow skillet/pan, heat the oil over medium heat.
- Once hot, add the greens, their stalks and garlic. Season with salt and pepper.
- Sauté, stirring often, until the stalks are tender to your preference, and your greens are wilted. This could take anywhere between 5 to 10 minutes, depending on your burner and heat.
- Place the cooked veggies in a bowl. Add a splash of vinegar if desired, and serve warm.
Notes
This recipe is adaptable in the amounts you use of every ingredient. Adjust as you’d prefer if needed.
