Chipotle Mashed Sweet Potatoes

Thanksgiving is coming upon us quickly, and I would imagine many of you are trying to finalize your menus. We purchase whatever we can as early as we can to beat the crowds and the possibility of stores being out of stock of some items. I know the feeling.

Here’s a spicy and delicious side dish that’s quick and easy, fairly inexpensive, and can be made beforehand, with ingredients bought weeks in advance.

To put in very simple terms, this is a mashed sweet potato dish dressed up with chipotle flavors and some sweetness. So. Easy. And so yummy.

I use the entire 7-ounce can of chipotles in adobo sauce. You don’t have to use the entire can, but if you love the heat and flavor of chipotles, go for it. I will slice into the big peppers and remove as many seeds as I can easily remove. You don’t have to remove the seeds, but I don’t want that texture in my sweet potatoes. Up to you if you want to remove them. Oh, and please, use disposable gloves if you do need to handle the peppers; it will keep the spiciness from spreading to your eyes, or anywhere else you don’t care for a burning sensation.

A few notes: You can omit the ground chipotle chile, but it does bring a bit more smokiness to the potatoes. Boil or steam your sweet potatoes, cooking to fork-tender. I would not microwave them.

If you take this dish to a potluck for Thanksgiving (or any other occasion), you may want to put a “spicy” sign on the serving spoon as a warning. Some people may thank you, while others will go back for more!

Ingredients
  

  • 7 sweet potatoes
  • 4 ounces unsalted butter
  • 1/4 cup light brown sugar
  • 1 7-ounce can chipotle peppers in adobo, peppers chopped
  • 1/4 - 1/2 teaspoon ground chipotle chile powder, to taste
  • sea salt, to taste
  • 1 tablespoon Italian parsley, chopped, optional garnish

Instructions
 

  • Bring a large pot of water to a boil, enough water to cover the potatoes by an inch or two.
  • While the water is heating, peel the sweet potatoes and cut them into large chunks. Add them to the boiling water.
  • Cook the potatoes for 15 - 20 minutes, depending on the size of the potato chunks.
  • Either drain the potatoes in a colander or use a skimmer (aka spider) to remove the potatoes to a large bowl. If you drain them, you can return the potatoes back to the pot.
  • Add the butter, sugar, peppers, adobo sauce, chipotle powder, and salt to taste.
  • Using a potato masher, mash the ingredients together.
  • Stir the ingredients together well, taste for seasoning and adjust salt and sugar to taste. Sprinkle with parsley, if desired.
  • Serve warm.

Notes

The Chipotle Sweet Potatoes can be made up to 2 days beforehand then reheated in the oven or microwave. You can keep the finished sweet potatoes in the refrigerator for up to 3 days. Freeze in an airtight container for up to 3 months.
