Guac for Two in Two (Super-simple, Super-good, Super-fast Guacamole)

Let me preface by saying if you are new to making fresh guacamole, you most likely won’t accomplish this in 2 minutes on your first try. (I really hope there’s someone out there saying, “Just watch me!”) It takes time to learn, but the goal is to be able to make fresh, delicious, healthy guacamole in a very short amount of time. Why?, you wonder. Because it can be done, why wait to have an awesome snack? And, it’s just downright fun.

PLEASE, wash your avocados so you are not pushing germs into your avocado as you cut into it. Using a fresh lime? Wash that, too! Good hygiene in the kitchen is always a welcomed lifestyle.

Mexican Chalupas are a great way to use your guacamole!

Ever heard the phrase “mise en place”? It simply means you have all your ingredients and tools ready near you before you begin to prep/cook. Here you’ll need a sharp chef’s knife (8” works great!), a cutting board, medium bowl, meat/potato masher or fork, a soup spoon, a dish towel or dish cloth, and your ingredients. Read through the instructions at least twice. Then get ready. 3. 2. 1…

I think the only downside to avocados is their oxidation. Once the “flesh” is exposed to air, it’s all downhill from there. There are some tricks online that are supposed to help keep your guac a cheery green, but I have yet to find one that actually works. If something works for you, I’d love to hear!

So, here’s the recipe. I’m currently working on a video myself, but my avocados have decided not to cooperate. If you make food videos, you totally get it. Some clips get one opportunity to shine and that’s it. Either it’s a success, or you start-over. (So far, it’s been a lot of start-overs.)

Equipment

  • Chef's knife
  • cutting board
  • Medium bowl
  • Meat/potato masher (or fork

Ingredients
  

  • 2 ripe avocados, washed
  • 2 tablespoons lime juice, fresh or bottled
  • kosher salt, to taste
  • freshly-cracked black pepper, to taste
  • tortilla chips, for serving (or just a spoon!)

Instructions
 

  • Do you have all your tools and ingredients in front of you?
  • Lay the avocado long-ways on your counter. Place the palm of your hand on top of the avocado with gentle pressure and fingers extended out. Let’s protect those necessary extremities.
  • Place the blade of the knife sideways (parallel with the counter). Cut through the side of the avocado (try to cut in the middle of the avocado to produce two equal halves) until it hits the pit.
  • Rotate the avocado 360 degrees so that the knife slices around the entire avocado cutting it in half. Place the knife on the counter.
  • Pull the 2 halves apart.
  • Hold the half of the avocado with the pit in one hand that is covered with a dish cloth or towel protecting your hand.
  • Give a slight “whack” with the knife’s blade into the pit and twist. The pit should easily come out of the avocado, stuck to the knife’s blade. Discard the pit.
  • Using a spoon, scoop the “flesh” out of the skins into a medium bowl.
  • Add one tablespoon of lime juice, a pinch of salt and a few grinds of freshly cracked black pepper.
  • Using a meat/potato masher or a fork, mash to combine all the ingredients together, then taste.
  • Add more lime juice, salt and/or black pepper to taste.
  • Your guacamole is ready to be served with chips, atop chalupas, with chips, or any Mexican meals. Refrigerate leftovers in an airtight container.

Notes

You can dress up this simple guacamole with some add-ins: Diced red onion, diced tomato, minced fresh garlic, chili powder and/or ground cumin, chopped cilantro.
The nutritional chart is calculated with ½ teaspoon kosher salt and ½ teaspoon black pepper. No chips are included either.
