Lady Grey a la Creme Black Tea by The Spice and Tea Exchange in Blowing Rock, NC is filled with notes of lavender, lemon, orange and creme, but also contains the traditional flavors of earl grey tea. It’s delicious in the mornings with a bit of caffeine to get you going. Enjoy with scones, cookies, etc. for an afternoon snack and pick-me-up.

A note on sweeteners… The Spice and Tea Exchange has a wealth of sugars and honeys that would beautifully accentuate the flavors of the Lady Grey a la Creme Black Tea. If you purchase the tea, peruse the sugars and I think you’d find something you’d like.

I steep the tea for a London Fog, my absolute favorite tea drink. The tea is very good straight-up, but I enjoy it to the fullest as a London Fog.

The Lady Grey a la Créme loose tea is some of the prettiest and aromatic teas, in my opinion, that The Spice and Tea Exchange offers. Earl Grey is a very traditional blend for London Fog, but the additions of lavender, lemon, and more create a beautiful balance.

The steeping instructions on the tea packet state 2 teaspoons of the loose tea to 8 ounces of water, but I personally like it less strong. I like 2 teaspoons to 10 ounces of water for a London Fog.

This recipe is adjustable. Use less or more frothed dairy. Use less or more tea leaves according to your personal tastes. Use a little, a lot, or no sweetener. Add a little squeeze of fresh lemon. Use a vanilla or lavender flavored syrup, or honey. Have fun with it! And, if a London Fog is not your forte, the Lady Grey tea is excellent flying solo!

Ingredients
  

  • 10 ounces filtered water
  • 2 teaspoons Lady Grey a la Creme Black Tea, The Spice and Tea Exchange
  • 1/3 - 1/2 cup whole milk, or half and half, see Notes
  • Sweetener, to taste, see Notes

Instructions
 

  • Bring the water up to a gentle boil, about 200 to 210 degrees F.
  • Add the loose tea to a tea ball or other diffuser. Place the diffuser into the hot water and steep for 4 minutes.
  • While the tea is steeping, heat the whole milk until hot, but not boiling. Using a hand-held frother or espresso machine’s wand, froth the milk. Be sure your cup or container has plenty of room for the foam to expand.
  • After 4 minutes, remove the tea. Add any sweetener to the tea.
  • Pour the frothed milk over the tea.
  • Enjoy very warm!

Notes

Certain milks froth better than others. In a nutshell, whole milk, 2%, and half and half do well for frothing. They have a higher fat content than soy milk or other non-dairy “milks,” but not as much fat as heavy cream. The 3 listed are your best bet for nice froth. Source: Tasting Table.
