Lemon-Cinnamon Fog

Once I learned how to make a London Fog, I started experimenting with other Teavana teas. (All Teavana teas that I have tried are fantastic, by the way!) I wanted to come up with infused simple syrups to amp up flavors that were already in the teas.

I happened to be skimming the Starbucks website and read their description of a drink called “Nitro Lemon Fog.” I knew I would fall in love with it if I had the opportunity to try it. Unfortunately, I don’t think this specific drink is available anymore, anywhere. (If a reader knows otherwise, I’m all ears!) Thus, began the trial and errors in my kitchen until the “liquid gold” was perfected. Paired with the peachy Teavana tea, this hot-creamy-lemony cup of yum is just divine!

Ingredients
  

Lemon-Cinnamon Simple Syrup

  • 1 cup water
  • 1 cup granulated white sugar
  • 7 cinnamon sticks
  • zest from 2 lemons, peeled with a vegetable peeler into strips
  • 1 whole vanilla bean, slit and seeds scraped into pan for syrup

For the tea:

  • 10 ounces water
  • 2 Teavana Peach Tranquility tea bags
  • 1/3-1/2 cup half and half
  • Lemon-Cinnamon Simple Syrup, see recipe above

Instructions
 

For the Lemon-Cinnamon Simple Syrup

  • Add the water, sugar, cinnamon, zest, vanilla seeds and the vanilla pod into a small saucepan and bring to a gentle boil over medium-high heat, stirring occasionally to dissolve the sugar.
  • Turn off the heat and allow the syrup to steep for at least 20 minutes, longer is fine, too. (You can allow the syrup to completely cool to room temperature then strain, if preferred.) See Notes.
  • Strain (see Notes) into a container (I like a glass jar) and refrigerate for up to a month.

For the tea:

  • Bring the water to a boil in a microwave safe cup or mug. You can also use an electric kettle to bring the water up to a boil then pour into your mug. I like to use Adagio Tea’s Ingenuitea teapot. See Notes below for information on this teapot.
  • Place the 2 teabags in the water and steep for 5 minutes.
  • While tea is steeping, using a 2-cup microwave-safe measuring cup, warm and froth the half and half. You can do this in the microwave. Set aside.
  • After steeping tea bags for 5 minutes, remove the bags and discard.
  • Add as much syrup as desired.
  • Add the frothed half and half. Gently stir and enjoy!

Notes

When straining the Lemon-Cinnamon Simple Syrup, do not use cheesecloth. You'll want to use a metal or plastic strainer with holes that will still allow the vanilla seeds to flow through. You just want to catch the zest, cinnamon sticks and vanilla pods.
Adagio Tea sells the IngenuiTEA teapots on their website. It’s a very handy one-serving, microwavable teapot. You can heat your water, steep your tea, then by placing the teapot on the rim of your mug, a valve releases your brewed tea into your mug. So easy and simple. This teapot works great with loose-leaf tea, too. The mesh bottom keeps the leaves in the teapot and the brewed tea flows into your mug. Pretty handy.
If you LOVE cinnamon, you can add a cinnamon stick (or 2!) to the tea bags as they steep for 5 minutes. 
You can cut your “naked” lemons into slices or wedges and add it to water for a refreshing and healthy drink. That’s what we do at our house. 
Yes, you will have flecks of vanilla bean in your tea. It adds character. 
If you don’t like cinnamon, just use the lemon zest and vanilla. 
Just FYI, I did try to make this Keto by using Swerve confectioners’ sugar. It was just ok. Maybe you’ll have better luck if you try it with other sugars.
There is no nutritional chart. Everyone will use different amounts of the syrup and possibly other dairy, so there’s not a good guess on the complete nutrition. Feel free to use an online calculator for whatever dairy you use and amount of syrup.
Here’s another idea for you… You can scrape the vanilla seeds into the syrup then put the pods into sugar to make Vanilla Sugar. Super-duper simple! You can use this sugar anytime you want a little vanilla added. Like cupcakes or cake, coffee or tea, etc…
