Roasted Asparagus

Easy, oven-roasted asparagus is a healthy, delicious vegetarian side dish.

This side dish cannot be simpler. When you can find fresh asparagus, there’s no reason to purchase canned or frozen asparagus again.

I love roasting veggies. I’ll admit, mainly because popping them into the oven frees me up to focus on other dinner components. And, it frees up a burner on my cooktop when I have several dishes to make for a meal.

It’s a simple flavor mixture of oil, garlic, and a gourmet cheese. I suggest Parmesan or Gruyere, but Comté, or even sharp white cheddar, would be good, too, as a sprinkling over the baked asparagus.

I used my Lemon Infused Olive Oil from Abingdon Olive Oil Company. You may use another infused oil or a neutral oil such as avocado oil.

Ingredients
  

  • 1 bunch fresh asparagus, (1 pound)
  • 2 teaspoons extra-virgin olive oil, or olive oil
  • 2 garlic cloves, finely minced or grated on a zest like a Microplane
  • 1/2 teaspoon kosher salt, or sea salt, or seasoned salt
  • 1/2 teaspoon freshly-cracked black pepper
  • 2 tablespoons Parmesan or Gruyere cheese, finely grated

Instructions
 

  • Preheat the oven to 425 degrees F.
  • Line a small baking sheet with foil or parchment, or you can use a 9x13” pan. No need to grease. Set aside.
  • Take one asparagus spear and bend until it breaks. It should break approximately 2” from the bottom.
  • Lay the asparagus group together. Trim the bottoms off at the breakpoint of the spear you snapped. After all the spears are trimmed, rinse them and pat them dry.
  • Scatter the asparagus into a single layer on the baking sheet.
  • Drizzle with the oil. Sprinkle the garlic, salt, and pepper over the asparagus and toss all the ingredients together to evenly coat.
  • Bake in the preheated oven for 10 to 25 minutes, depending on the thickness of the spears.
  • After 10 minutes, check a thick spear by pricking with a fork. Add more cooking time if necessary to achieve desired doneness.
  • Remove from the oven, sprinkle with the cheese, and serve immediately.

Notes

Choose firm asparagus with tight heads/tips.
If not cooking the asparagus within 2 days, trim the bottoms by about an inch. Place the asparagus upright in a glass with several inches of water. Keep refrigerated. Use within 4 days for best results. Check out foolproofliving.com’s article for a more complete description on asparagus storage.
