Apple Overnight Oats

Easy overnight prep for a delicious, apple and oats breakfast, with a secret ingredient.
I tried several variations of Overnight Oats and got distracted and never came back to the recipe to play around; that was about 2 years ago. Better late than never, right? I flung myself back into it, fully determined to find a flavor that I just could not live without.

Bingo. Apple Overnight Oats.

These Apple Overnight Oats are a bit more decadent than you’d expect for a breakfast. They are not all that healthy. I’ll admit that right off the bat. The sweetener is apple butter. It has more apple flavor, sweetness, and is a homey “comfort food.” The addition of the freshly-grated apple just before serving really makes this recipe wonderful.

Below is the recipe I use for these Apple Overnight Oats. Sure, you can add a bit of plain yogurt or even omit the chia seeds if you don’t like the texture. It’s adaptable, but I think what is listed below is heavenly.

Using rolled oat/old fashioned oats allows overnight oats to stand up to the liquid and add-ins.
A few tips…

1. Use rolled oats, also known as old fashioned oats. Steel-cut oats are not really the best option for overnight oats.You would need to cook the steel-cut oats a bit for them to not be so chewy, but then if you’re going to cook them, might-as-well go ahead and eat them then. Instant oats… well, enough said. Rolled oats are ideal. They will hold up after absorbing the dairy.

2. Due to natural oxidation, grate an apple and stir into the oats just before enjoying, instead of adding the apple to the oats prior to refrigeration. Also, it’s up to your preference about peeling the apple. The peel contains antioxidants, so keep that in mind; you might like knowing you’re getting the extra nutrients.

3. Whatever container you choose to store the oats overnight, be sure it is covered/has a lid. Whether that is a mason jar with a lid, or plastic wrap over a bowl, you’ll have better, fresher-tasting results and you want to make sure it is enjoyable.

4. This is amazing warmed-up in the microwave, too!

Apple Overnight Oats can be placed in just about any container with a lid or that you can use plastic wrap.
The sweetener in my recipe is from the 2 heaping tablespoons of apple butter. If you make another flavor of overnight oats, your sweetener can be other ingredients. Just about any sweetener will do… maple syrup, brown sugar, honey, or even a bit of a flavored coffee creamer can be delicious. When it comes to honey and maple syrup, try a flavored version! Play around with it and enjoy your food!

You could use unsweetened applesauce, but apple butter is super-delicious. I highly suggest you make my recipe as is first, then adjust any ingredients to your liking. You just might be in love with this recipe as I am. My favorite brand of apple butter is Tennessee’s Best Old Fashion Style Apple Butter. They also sell it in sugar free. Maybe I’m a bit biased living in TN, but it’s so good!

A heads-up here on add-ins. When making any flavor of overnight oats, there are some ingredients that can be added before refrigeration and there are some that are better topped just before serving. Follow the recipe’s instructions for best results.

This recipe is super-delicious, it could be used for a lunch on the go or an evening movie snack.

Ingredients
  

  • 1/2 cup rolled oats/old fashioned oats
  • 1/2 cup plus 2 tablespoons unsweetened almond milk, see Notes
  • 1/4 cup nonfat, plain Greek yougurt, or other high protein yogurt, optional
  • 1 tablespooon chia seeds
  • 2 heaping tablespoons apple butter, store-bought or homemade
  • 1/8 teaspoon vanilla extract
  • 1/4 teaspoon apple pie spice
  • 1/2 cup fresh apple, peeled or unpeeled, grated or chopped

Instructions
 

  • In a 1 ½ - 2 cup bowl, mason jar, or other container that has a lid or can be tightly covered, add the oats, milk, chia seeds, apple butter, vanilla and cinnamon. Stir thoroughly.
  • Cover the container (lid or plastic wrap, etc.) and refrigerate overnight, 6 - 8 hours.
  • Just before serving, grate an apple (peeled or not) over the container/bowl or on a cutting board, and add to the oats. Stir well.
  • If the oats are too thick for your preference, you can add more milk in small amounts until you’re happy with the consistency.
  • Enjoy the oats cold from the fridge, warmed in the microwave, or at room temperature.

Notes

Overnight Oats can be kept covered in the refrigerator for up to 3 days. I would not suggest freezing.
Just about any dairy can be used in Overnight Oats. The thicker the milk, the thicker the oats will be. I prefer unsweetened almond milk or unsweetened coconut milk (not from the can, but found with the other milks in the cold, dairy section). I discovered Good Culture’s 2% Probiotic milk is very sweet. It adds more sweetness, even though the oats don’t need it. 
Don’t care about calories? Add a drizzle of caramel over the top and top with toasted, chopped pecans or walnuts.
Nutritional chart was calculated without the Greek yogurt. With the yogurt, protein is 13.55 grams. The addition of the yogurt does add a nice tanginess, though.
