1/2cupplus 2 tablespoons unsweetened almond milk, see Notes
1/4 cupnonfat, plain Greek yougurt,or other high protein yogurt, optional
1 tablespoonchia seeds
2heaping tablespoons apple butter, store-bought or homemade
1/8 teaspoonvanilla extract
1/4teaspoonapple pie spice
1/2cupfresh apple, peeled or unpeeled, grated or chopped
Instructions
In a 1 ½ - 2 cup bowl, mason jar, or other container that has a lid or can be tightly covered, add the oats, milk, chia seeds, apple butter, vanilla and cinnamon. Stir thoroughly.
Cover the container (lid or plastic wrap, etc.) and refrigerate overnight, 6 - 8 hours.
Just before serving, grate an apple (peeled or not) over the container/bowl or on a cutting board, and add to the oats. Stir well.
If the oats are too thick for your preference, you can add more milk in small amounts until you’re happy with the consistency.
Enjoy the oats cold from the fridge, warmed in the microwave, or at room temperature.
Notes
Overnight Oats can be kept covered in the refrigerator for up to 3 days. I would not suggest freezing.Just about any dairy can be used in Overnight Oats. The thicker the milk, the thicker the oats will be. I prefer unsweetened almond milk or unsweetened coconut milk (not from the can, but found with the other milks in the cold, dairy section). I discovered Good Culture’s 2% Probiotic milk is very sweet. It adds more sweetness, even though the oats don’t need it. Don’t care about calories? Add a drizzle of caramel over the top and top with toasted, chopped pecans or walnuts.Nutritional chart was calculated without the Greek yogurt. With the yogurt, protein is 13.55 grams. The addition of the yogurt does add a nice tanginess, though.
