Cranberry Orange Overnight Oats

A specialty sugar, Cranberry Orange Sugar, from The Spice and Tea Exchange in Blowing Rock, NC gives a sugary pop to sweets! Here, it’s for breakfast… or a snack but, deliciously sweet, it may feel like dessert!! This overnight oats recipe makes the Cranberry Orange Sugar shine! It takes center stage instead of a backseat flavor.
This super-simple recipe is a perfect addition to your fall and winter recipes! It’s so delicious. Try it once, and you’ll be hooked! This is the type of recipe that gets under a magnet on your refrigerator.
The oats and cranberries are made in 2 containers, then stirred in the morning, or when you’re ready to dive in. I have given you suggestions for toppings if you want more texture, like crunch and chew.
Eatingwell.com gave me the idea of microwaving to soften the cranberries, instead of pulling out a saucepan and heating on the stovetop. And, it’s super-fast!
I have used fresh cranberries. Frozen will work fine, too. Dried cranberries will give a very different texture. They will hydrate to an extent, but not as fresh or frozen cranberries. Plus, they are sweetened and will taste a bit different.
If you don’t have lids for the containers you use, wrap them tightly with plastic wrap. I used one of my decorative glasses from the summer that comes with a lid and straw. It worked perfectly for the oats. For the cranberry mixture, I just wrapped the measuring cup in plastic wrap. Pretty simple.

Cranberry Orange Overnight Oats
Ingredients
Cranberries:
- 1/3 mounded cup fresh cranberries
- 1/4 cup pure orange juice
- 1 - 3 tablespoons Cranberry Orange Sugar, The Spice and Tea Exchange
Oatmeal:
- 3/4 cup rolled/old fashioned oats
- 1 1/2 tablespoons chia seeds
- 1 cup milk of choice
- 1/2 teaspoon fresh orange zest, optional
Toppings:
- Nuts, (pecans, macadamia, walnuts, etc.), chopped and toasted
- Dried cranberries, for texture
- Sweetened, shredded coconut, toasted

Instructions
- In a 2-cup microwave-safe glass bowl or measuring cup, add the cranberries, orange juice, and Cranberry Orange Sugar to taste (I used 2 ½ tablespoons of the sugar). Stir to combine.
- Microwave the cranberry mixture for 1 minute. Watch to be sure it does not bubble over. Stir. Microwave in increments of 30 seconds until the cranberries have popped.
- Stir and taste again. Adjust any additional sugar. Set aside.
- In a 2-cup capacity jar, add the oats, chia seeds, milk, and orange zest if using. Stir.
- Cover both jars (cranberries and oats) and refrigerate overnight, up to 2 days.
- To serve, stir the oats. Stir the cranberries. Add the cranberry mixture to the oats and stir. Top with any toppings desired. The combined overnight oats are so good warmed up, too!
