In a 2-cup microwave-safe glass bowl or measuring cup, add the cranberries, orange juice, and Cranberry Orange Sugar to taste (I used 2 ½ tablespoons of the sugar). Stir to combine.
Microwave the cranberry mixture for 1 minute. Watch to be sure it does not bubble over. Stir. Microwave in increments of 30 seconds until the cranberries have popped.
Stir and taste again. Adjust any additional sugar. Set aside.
In a 2-cup capacity jar, add the oats, chia seeds, milk, and orange zest if using. Stir.
Cover both jars (cranberries and oats) and refrigerate overnight, up to 2 days.
To serve, stir the oats. Stir the cranberries. Add the cranberry mixture to the oats and stir. Top with any toppings desired. The combined overnight oats are so good warmed up, too!
Notes
Use rolled oats, also called old fashioned oats. Steel cut oats will not soften overnight unless they are pre-cooked. Instant oats will become too mushy. Rolled oats are the perfect middle of the road.Not sweet enough? You can add confectioners’ sugar for additional sugar. It will dissolve more quickly than adding the granulated sugar.There are a plethora of recipes online for overnight oats. Once you get the hang of basic ratios of oats to dairy to fillings, you can create your own flavor profiles!
