The boxed cake mix industry has truly allowed bakers to turn convenience into elegance. Who knew a white cake mix could turn into a Matcha-Blackberry Cake or a Chai-Spiced Cake (a work in progress)? Do I have your attention yet?
All the recipes in the Multi-verse use some sort of boxed cake mix. Maybe that is a basic white mix or pineapple-flavored morphed into tropical cupcakes. You will discover recipes that are incredibly simple, yet oh so delicious, that people would never guess came from a boxed cake mix.
I used to be of the mindset that if you were not measuring out your own flour, sugar, etc., it was not a “real” cake and certainly not homemade. I have been astounded by the number of cakes sold in restaurants AND bakeries that use a boxed cake mix. Now, granted, some cakes you can taste the “cardboard” of a cake mix (you know what I’m talking about), but others I could not believe their cakes have the base of a cake mix. But, don’t worry. If you disagree… I have several “flour, sugar, eggs…” recipes on my website you can try.
Ever heard of the “darn good chocolate cake”? That is the first recipe I discovered that started with a cake mix, but then turned it into some thing moist, delicious, and flavorful that satisfies any sweet tooth. The recipe starts with a devils food or dark chocolate fudge cake mix, throw in some additions that bring flavor and moisture, bake in a Bundt pan, drizzle with ganache, or a dusting of powdered sugar, and you have this decadent chocolate dessert.
Speaking of “creating,” it is good form to give credit to the author(s) of the recipes that you adapt your recipe from, give you inspiration, etc. Good manners and good form are still important for the food blog world. You’ll find I refer to food authors/bloggers quite often. Be sure to check their recipes and websites, too; you may find yourself inspired.
So, here you’ll find delicious cakes that use a boxed mix, but are impressively good! This is only the beginning…there’s so much more to come in the Multi-verse.
I do have to give a word on how this title and series came to be…
I made the Strawberry Swirl Bundt Cake for my C3 group (you can find out more about them in my About page.). When I told them this cake was made from a box, the room went silent, and everyone looked at me with faces of confusion, doubt, and surprise. After the shock passed, they all started throwing ideas around of how to build up on this idea. My daughter said, “Mom!, you should call it “the Multi-verse of cake mixes,” and now what I present to you is the very beginning of the Multi-verse.
May you enjoy it as much as I have!
Enjoy!
