Apple Dump Cake (A Multi-verse Cake)

Fall is just starting to show in our area and I love it! Apples are popping up at farmer’s markets and all the coffee shops are selling their fall flavors. Myriads of apple recipes are all across the social media sites and cooking blogs. It’s so fun.

I already have an amazing Apple Bundt Cake recipe on my website, but I just had to make a Mutli-verse recipe for apple lovers like me.

Most of the “dump cake” recipes online use a can or two of apple pie filling. I wanted fresh apples baked in a spiced-syrup that tastes like a homemade apple pie. You will be doing some prep work with peeling and slicing the apples, but you get to nibble on the apples along the way, too, and that’s just part of the fun.

I used a Duncan Hines Spice Cake Mix to bring in some extra fall flavors, instead of a yellow or vanilla cake mix. I do have spices in my apples, but this cake mix brings another dimension of spice.

Walnuts add a crunch to the cake, but you could sub in chopped pecans if you’d rather. No need to toast them to bring out their flavor; the oven-baking does that for you! I have used half a cup of walnuts and several people told me it was just too much. The half a cup will cover the top well, but use as you desire.

Please, I beg you, serve this Apple Dump Cake warm with vanilla ice cream. It’s so delicious! Want to go a step further? Drizzle with some caramel or Salted Caramel (homemade or store-bought is fine).

My Apple Dump Cake is perfect for after dinner with guests because it makes a good amount of servings for a crowd. Baking in a 9×13” dish, plus the vanilla ice cream, can serve 10 to 12 people.

Store leftovers, well covered, in the refrigerator for up to 5 days. Reheat to enjoy again! And hopefully, you still have some vanilla ice cream in your freezer.

This recipe calls for using ¾ of a box of Spice Cake Mix. Don’t feel like you’re being wasteful. The remaining cake mix can be used for another delicious dessert… Spice Mug Cake!

Ingredients
  

  • 2 quarts peeled, cored, sliced apples, 1/2" thick slices
  • 1 1/2 tablespoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 tablespoons cornstarch
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 teaspoons vanilla extract, divided
  • 1/2 cup water
  • 1 15.25-ounce box Spice Cake mix
  • 12 tablespoons unsalted butter, melted
  • 1/3 cup walnuts, chopped

Instructions
 

  • Preheat the oven to 350 degrees. Grease a 9x13” dish; set aside.
  • Place the sliced apples in a large bowl.
  • In a medium bowl, combine the spices, cornstarch, and sugars. Add this mixture to the apples and toss. Combine the water and 1 teaspoon of vanilla in a small measuring cup; pour over the apples and toss again.
  • Evenly spread the apple mixture in the bottom of the grease dish.
  • Sprinkle ¾ of the cake mix evenly on the top of the apples.
  • Combine the melted butter and remaining teaspoon of vanilla; stir.
  • Pour the butter-vanilla mixture evenly over the cake mix.
  • Sprinkle the walnuts over the top.
  • Bake in the preheated oven for 1 hour or until browned on top and the edges are bubbling.
  • Remove the pan from the oven. The cake can be served very warm or slightly cool. (It’s better warm.) Vanilla ice cream is wonderful with this Apple Dump Cake (or any dump cake!)

Notes

My first attempt at this recipe used the whole (15.25-ounce) box of cake mix. Everyone agreed it was just too much. Half the package seemed too little, so ¾ of the box was definitely the “sweet spot.”
Don’t throw away the remaining cake mix! Use it for individual Spice Mug Cakes.
