Roasted Mushrooms with Garlic
Roasted Mushrooms make a great side dish to just about any meal. With the addition of garlic, these mushrooms are amped-up with flavor and aroma. It takes a little time to wipe the mushrooms clean of dirt, but please, wipe them and not rinse with water. Even a little bit of a rinse will affect your mushrooms. These guys are very absorbent. You’d much rather them soak up the flavors of butter, garlic, and soy sauce than bland water. If you cook with mushrooms often, investing in a mushroom brush or a soft-bristle pastry brush might be a good idea for you.
Once you’ve gotten the mushrooms clean, the rest comes together quickly and beautifully.
Roasted Mushrooms with Garlic
Ingredients
- 16 ounces whole cremini mushrooms
- 8 ounces shiitakes, sliced or whole
- 2 large garlic cloves, sliced
- 5 tablespoons unsalted butter
- 2 tablespoons soy sauce, see Notes
- 2 teaspoons light brown sugar
- 1/2-1 teaspoon kosher salt, see Notes
- 1/2 teaspoon freshly cracked black pepper
- 1 tablespoon parsley leaves, chopped
Instructions
- Preheat the oven to 450 degrees.
- Line a large, rimmed baking sheet wrapped with foil around the edges of the pan (makes for super-easy clean up). No need to grease the foil.
- Using a dry paper towel, wipe the mushrooms to remove dirt. Add the mushrooms to a large mixing bowl.
- Add the garlic to the mushrooms.
- Melt the butter in a small bowl in the microwave. Add the soy sauce, light brown sugar, a pinch of kosher salt and the pepper and stir to combine.
- Scrape the mushrooms onto the baking sheet. Use a silicone spatula and scrap out any garlic or butter left on the sides of the bowl.
- Roast in the preheated oven for 20 minutes, or until mushrooms are softened and a little golden.
- Remove the mushrooms from the pan using a slotted spoon (if a lot of liquid is on the foil), and place them in a serving bowl.
- Sprinkle with parsley if desired and serve warm.
