Roasted Mushrooms make a great side dish to just about any meal. With the addition of garlic, these mushrooms are amped-up with flavor and aroma. Garlic lovers everywhere, feel free to add more garlic to the recipe.
Line a large, rimmed baking sheet wrapped with foil around the edges of the pan (makes for super-easy clean up). No need to grease the foil.
Using a dry paper towel, wipe the mushrooms to remove dirt. Add the mushrooms to a large mixing bowl.
Add the garlic to the mushrooms.
Melt the butter in a small bowl in the microwave. Add the soy sauce, light brown sugar, a pinch of kosher salt and the pepper and stir to combine.
Scrape the mushrooms onto the baking sheet. Use a silicone spatula and scrap out any garlic or butter left on the sides of the bowl.
Roast in the preheated oven for 20 minutes, or until mushrooms are softened and a little golden.
Remove the mushrooms from the pan using a slotted spoon (if a lot of liquid is on the foil), and place them in a serving bowl.
Sprinkle with parsley if desired and serve warm.
Notes
If you are adding regular soy sauce, I wouldn’t add much kosher salt. If you’re using low sodium soy sauce, you’ll need to add a little more salt to your mushrooms. Since mushrooms are safely eaten raw, you can taste one before they go into the oven to see whether or not you’d like to add more salt.
