Oven-roasting frees up your cooktop and your hands to work on other dinner dishes. Simple ingredients allow the sweet potato's natural flavors to shine.
2poundssweet potatoes, peeled and diced into 1/2 - 3/4" pieces
1/2tablespoonextra-virgin olive oil
1tablespoonunsalted butter, melted
1 1/2 tablespoonshoney,or maple syrup or agave syrup
1/2teaspoongarlic powder
1 - 2teaspoonskosher salt
1/2teaspoonfreshly-cracked black pepper
1tablespoonfresh basil,chopped, see Notes
Instructions
Preheat the oven to 425 degrees. Line a baking sheet with aluminum foil or parchment paper for easy cleanup. Set aside.
Place the potatoes, oil, butter, honey, and spices into a gallon zip-top bag, seal the bag, and shake to evenly coat the potatoes.
Scatter the potatoes evenly in one layer on the baking sheet and bake for 20 to 25 minutes, or until they are tender and lightly browned.
Finish with the sprinkling of herbs.
Notes
The nutrition chart was calculated with 1 teaspoon of kosher salt.I used “cinnamon basil” from our farmer’s market. You can use regular sweet basil, or your favorite herb, or none at all.Instead of the dry spices listed in the ingredient list, you can substitute with your favorite all-purpose seasoning.Add some diced onion to the potatoes for some extra flavor and bulk.If you use a salt other than kosher salt, adjust your amounts. Even sea salt has a higher sodium content. Season to taste.
