French Toast with Cardamom

French Toast… so simple and easy to make and SO delicious. If you’ve ever had it, you’re already reminiscing about the sweet smell of vanilla and the textures of syrup-soaked bread with every bite. And if you’ve never had it, I hope your mouth is watering ready to try your hand at it.

The French toast that I grew up with as a child was made with just eggs. There was no vanilla or cinnamon or anything. Boring and dull. It took my husband to correct me in our early years of marriage about what else should be in French Toast. But now, loving to create and devise flavors that I used to not even consider, this French Toast recipe proves to be a flavorful breakfast or brunch. The addition of vanilla and cardamom goes so well together and tastes amazing. 

Most likely you’ll have to cook these in batches, unless you have a griddle or electric skillet large enough to hold all 8 slices. It may take a little more time to cook them all. As you pull them off the heat, place them on a plate and lay a piece of wax paper over the top to keep them warm. You don’t want to wrap the plate or the French Toast will produce steam and make the toasts soggy. That’s not a happy breakfast.

I chose a pre-sliced brioche loaf from my local Publix for this French Toast. Regular pullman bread (white or wheat) will work well, too.

What to top your French Toast with? Of course, a good-grade maple syrup or pancake syrup is essential. I also like fresh berries. Photographed are some I found at my local grocery store… blueberries, strawberries, blackberries, and pineberries. I had no idea what these gorgeous pale pink-strawberry family-beauties were. A pineberry has a pineapple-strawberry flavor profile! They are sweet like a strawberry, white-ish yellow inside and very good! You don’t have to use them, but I found them very intriguing at the store and wanted to give them a try!

Lightly-sweetened whipped cream or a dusting of powdered sugar is fun, pretty, and yummy! When our kids were young, they used to call it “snow.” (I miss those days!)

Equipment

Ingredients
  

  • 8 slices bread
  • 4 large eggs
  • 1/4 cup milk
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • 1 tablespoon confectioners' sugar

Optional Toppings:

  • 2 tablespoons confectioners' sugar for sifting over
  • Maple syrup or pancake syrup
  • fresh berries
  • sweetened whipped cream
  • butter

Instructions
 

  • Preheat and lightly butter a non-stick griddle or large, shallow skillet over medium-high heat.
  • In a medium bowl, crack your eggs and beat lightly with a fork or whisk.
  • Add the remaining ingredients and beat the mixture again until all the spices are blended throughout the egg mixture.
  • Once your surface is hot, dip a slice of bread into the egg mixture, flipping to coat both sides of the bread. Allow the excess mixture to drip back into the bowl.
  • Place the bread on the hot surface and cook on each side for approximately 2 minutes, or until the egg is cooked and just browned. Continue the same process with the remaining slices of bread.
  • Remove the French Toast slices from the heat and place on individual plates or a platter for serving. Serve while still warm with any optional toppings listed above.

Notes

You can use your everyday pullman-style bread or a gourmet brioche. Whatever you have on-hand or care to purchase just for this occasion will work.
Any milk should work - almond milk, 2%, whole milk… I use whole milk for my French Toast.
This freezes beautifully. Just place pieces of wax paper in between the pieces of the already cooked French Toast. Wrap them well in 1 or 2 layers of plastic wrap, then place in a freezer zip-top bag or freezer-safe container for up to 3 months. Be sure to label your packaging with the contents and the date you place in the freezer. To thaw, place the pieces in the refrigerator for 1 to 2 days, then reheat in the microwave or gently rewarm on a griddle or in the oven, just until warmed through.
