Spice Mug Cake (A Multi-verse Cake)
If you don’t like wasting food, I hear you! I don’t like throwing out leftovers that didn’t get eaten or frozen before time expired. It’s money down the drain, so to speak. I’ve learned a lot about being resourceful over the years, how to repurpose or use up “whatever is in the fridge.”
My Apple Dump Cake recipe uses about ¾ of a box of dry cake mix. Even though you didn’t spend a lot of money on the cake mix itself, who wants to throw out the remaining mix? Not me. With less than half a box, this is what I came up with…another Multi-verse Cake!… single serve version.
Note: I have not tried this recipe with any other cake mix flavor. I would imagine it would have the same results, but I have not personally tested.
Whipped cream, vanilla ice cream, and/or caramel drizzle adds sweetness and creaminess that is simply delicious!
Spice Mug Cake
Equipment
- 1 7 to 10-ounce microwavable mug
Ingredients
- 6 tablespoons Spice Cake Mix
- 1/8 teaspoon pumpkin pie spice or apple pie spice optional, but recommended
- 2 tablespoons water
- 1 teaspoon oil, (or apple butter or pure pumpkin puree)
- Whipped Cream or ice cream, optional, but why not??
- Caramel Syrup, optional, but so good!
Instructions
- Combine the cake mix, pumpkin pie spice, water, and oil in a mug using a fork or whisk. Whisk until slightly thickened, about 30 seconds.
- Microwave for 70 seconds. Your microwave may take more or less minutes.
- When finished cooking, allow the mug cake to cool for about 5 minutes, or longer, at room temperature. Top with whipped cream, ice cream, and/or caramel and enjoy!
